Zombies can definitely see you through upstairs windows. While they may not see quite as well as you, don't turn on the lights at night, close the curtains, keep your clothes clean, and stay quiet if any are close by. It's basically game over if you wake up to a bunch of them making their way upstairs and banging on your bedroom door.

I just hate making crap walls and having to tear them down to build better ones, and would rather level up my carpentry some to get decent walls to start.

Pretty common sense kinda thing. If you find an axe you can chop down trees to make logs. If you have a saw you can make logs into planks. If you find [any weapon] you can chop down trees to make logs, just takes longer, same for doors. As mentioned you can do it from both sides so 8 planks per window which offers longest protection. However be aware that having more than 3 planks on each side means you can't look out the window anymore. Also it can be benefitial to alternate between outside and inside barricading. Then you definatly want boards on your windows. Slows them down a lot while breaking in, each plank matters in that regard. Exact same with doors, kind of vital if you plan on sleeping undisturbed in zombie infested zones. They eventually do get in though if it is a big horde and "knows" you're inside.
