I recall Return of the Jedi had a “workprint” in progress version of Despecialized or something like that. I haven’t been able to find a wiki or list of the version releases of Despecialized and when they came out.

I certainly wouldn’t put off watching Despecialized until 3.0 comes out. I would maybe consider holding off on burning Empire until 2.5 comes out, but if you just want to watch the films right now, there’s no reason to wait. Look for the Project 4K77 edition. It's the closest to a real untouched HD copy IMO. Look for the 4k77/4k80/4k83 projects. They're full remasters of the original trilogy sourced from 35mm prints. Despecialized has some rough moments, and a couple remaining shots with GOUT elements. 4k77 is a very consistent watch as far as picture quality goes, and the original effects never looked better. The color on the original non-DNR release was was not ideal, IMO, but Rob’s DNR color is much better.

The DNR version reduces film grain but other than that they are 100% the originals, unaltered, no tricks.
